Winemaking
Grape harvesting, crushing, and must decantation for one day. Fermentation at a controlled temperature between 16–20°C for 10–15 days. Racking at the end of fermentation and stirring of the fine lees for 4 months to enhance the body of the wine.

Pairings
Pinot Grigio DOC delle Venezie pairs very well with risottos and pasta, shellfish and seafood appetizers, baked or boiled fish. It can also be served as an aperitif.
